Layered Salad

This masterpiece is truly a labor of love. It's the second course in the nutritionally complete, "wet food" daily diet of our pets and parent birds.
The bottom layer consists of Beak Appétit (usually Nuts for Alfredo), then a generous portion of calcium-rich greens (such as collard or kale), and interesting, seasonal Asian greens from the local organic markets. We pile on carrots and two or three varieties of squash. Seasonal fruits such as grapes and berries are next. The mélange is topped with organic citrus (such as oranges, but sometimes grapefruit or tangerines) that acts as a natural preservative.

Available only to local customers and you can order in advance. Shelf life is four days.

A generous portion of the sacred mother-grain of the Incas (pronounced Keen-wah) is baked into our nourishing bread. Ingredients also include Cornmeal, Whole Eggs, Applesauce, Fresh Ground Broccoli and Carrots, Dried Cranberries, Raisins, Spices (including Citrus Peel and Cinnamon), and Orange Juice.

About our ingredients

Adzuki beans (also called aduki and considered the king of beans in Japan) provide high-quality protein. Organic bean sprouts contain high amounts of the antifungal, anticarcinogenic molecule resveratrol.

Black-eyed peas or cowpeas have been a staple of African cuisine since the ancient Egyptians. They're also a great source of selenium.

Buckwheat contains the highest proportion of essential amino acids in any grain especially lysine, which is very important to our birds. Buckwheat contains more calcium than other grains, it's rich it vitamin E, and contains almost the entire range of B-complex vitamins. Additionally, buckwheat inhibits melanin and enables greater absorption of the sun's rays (and therefore vitamin D).

Fennel seed is considered a warming herb in Chinese medicine, but it also contains quercetin, an antioxidant flavonoid (anticarcinogenic).

Fenugreek seed was used by the ancient Egyptians in embalming and in medicine to reduce fevers. It's actually a legume used as a spice, and a potent ancient medicinal plant with antiparasitic and antitumor effects.

Fruit Medley

Garbanzo beans or chick-peas are another ancient Egyptian and Mediterranean diet staple. They provide more vitamin C, more iron, and (with the exception of soy) more fat than other legumes.

Lentils are one of the world's oldest foods; some were found in the Step Pyramid at Saqqara! After soy they are the best source of protein from legumes; plus, they contain high amounts of calcium, magnesium, sodium, potassium, phosphorus, and vitamin A.

Millet (actually the grain proso in the U.S.) was one of the earliest cultivated cereals and is one of the sacred crops of China. It's a wonderful grain for sufferers of Candida. Of the true cereal grains it has the best amino acid profile and the highest iron content. It is rich in B vitamins and phosphorus, plus it is easy to digest.

Mung beans are considered an excellent tonic for the kidneys and liver according to Chinese medicine. In Asia they are served in hot weather because they can disperse body heat.

Greens provide a variety of nutritional advantages, including carotenoids (such as lutein and zeaxanthin, which function as antioxidant vitamins and promote lung health and function). Collards contain nearly the same amount of calcium as milk.
Turnip greens have a nutritional profile similar to collards. Rapini (broccoli rabe) contains twice the vitamin C of an orange and about the same amount of calcium as milk but rapini's calcium is more easily absorbed.
Bok choy provides plenty of vitamins A and C, plus the many phytonutrients associated with the cabbage (Brassica) family.

Squashes—especially the winter varieties—are one of the best sources of the carotenoids. Squash seeds are a superior source of zinc.

Citrus contains 58 known anticancer agents, lots of vitamin C, potassium, and citric acid. The pith contains bioflavonoids which are needed to absorb vitamin C. Citrus seed extract is a natural antibiotic and antifungal agent.

Cornmeal with a high flavor contains more nutrients. Yellow cornmeal contains more vitamin A than white cornmeal.

Eggs are a primary source of vitamin B12.

Applesauce is made from apples, which originated in Central Asia. Green apples cleanse the liver; pectin in apples promotes beneficial intestinal flora

Raisins are typically fumigated with methyl bromide. That's why we prefer organic raisins, which instead are frozen to –5 degrees to achieve insect kill.

Cinnamon is an ancient remedy considered warming, analgesic, stimulating, and astringent probably because it aids in the absorption of nutrients. It's also particularly helpful in combating Candida.
